Tomatoes I grant. Corn, the best brands are okay. Beans, well,
if you liked them in the first place, maybe.

Try some canned corn from, say IGA. A revelation, and not
in a good sense.

In fact, the Spaniards really prize their canned seafood.
I've had fresh most of the varieties that they can, not
canned. Perhaps it will be time to go to Spain to check
them out.

Smoked Garlic & Pumpkin Soup
categories: seasonal, odd
yield: 1 cauldron full

Olive oil for frying
1 sm pumpkin, peeled and diced
- or the guts of your halloween carving disaster
1 lg onion, chopped
- or 2 shallots, chopped
8 fresh smoked garlic cloves, chopped fine
1 c red lentils
100 g streaky bacon, chopped
fresh stock or stock cube
boiling water
fresh or dried oregano
h - To garnish
fresh cream or yoghurt
chopped parsley
grated garlic nuts (?)
- (I presume this means smoked cloves of garlic)
pepper
h - For the toast
yesterday's sliced bread
butter
feta or your choice of cheese
chopped fresh oregano
grated garlic nuts

In a heavy-based saucepan, saute chopped onion and pumpkin
in 2 Tb oil; then sweat on a low heat until the onion
starts to soften.

Meanwhile, chop the garlic and bacon, then add to the pan.

Fry 2 mins, then add the rinsed lentils to the pan. At
this point, make sure your fresh stock is ready or the
kettle has boiled.

Stir the lentils to stop them sticking, and pour in 2 c
stock. If you are using stock cube, just pour in hot
water then crumble the stock cube on top. Stir everything.

Simmer on a low heat for 20 min, until the pumpkin is very
soft and breaking up. At this point, you may need to add a
little more liquid. Adjust the seasoning and add a handful
of chopped fresh oregano, or 2 ts dried.

Turn the heat off, and just before serving, stir a cup of
cream or yoghurt into the pan.

Serve in bowls with a drizzle of cream or yoghurt on top,
a grating of smoked garlic nut and a scattering of chopped
parsley. Grind black pepper if you like.

To make the toast, spread the slices of bread out on an
oven tray and grill under a moderate heat until lightly
brown. Remove from the grill, turn the slice over and
spread the untoasted side with a generous layer of butter.
Crumble feta or other cheese over the butter, sprinkle the
chopped oregano and top with grated smoked garlic nuts. If y
ou are not using a salty cheese, you may like to add a pinch
of salt. Put back under the grill until the toast is ready,
and serve with the soup.
