I enjoy such searches and highly recommend them to all.

I've grown to sort of like parsnips with their somewhat
varnishy and medicinal taste. Over the years my appreciation
for the members of that family, from wild carrots on up,
has increased as my tolerance for bitter tastes has.

By the way, poison hemlock, whose effects are described in
Plato's evocatively named Phaedo, is said to taste like
parsnips.

Why bother with the scallions? You might as well obscure
the flavor of the sweet potatoes with something like
cayenne that won't stay on your breath.

Kale chips
categories: snack, crunchy
yield: 1 batch

1 lg bn kale, tough stems removed
- leaves torn into pieces
1 Tb extra-virgin olive oil
1/4 ts salt
Grinding of fresh black pepper

Position racks in upper third and center of oven;
preheat to 400F.

If kale is wet, very thoroughly pat dry with a
clean kitchen towel; transfer to a large bowl.
Drizzle the kale with oil and sprinkle with salt.
Using your hands, massage the oil and salt onto
the kale leaves to evenly coat. Fill 2 large
rimmed baking sheets with a layer of kale,
making sure the leaves don't overlap. (If the
kale won't all fit, make the chips in batches.)
Sprinkle with black pepper.

Bake until most leaves are crisp, switching the
pans back to front and top to bottom halfway
through, 8 to 12 min total.

Store in airtight containers.
