There have been moments (especially in the ICU a few
months ago) when I had my doubts.

I was thinking that I have made less in my life than many
and perhaps most of my classmates (both the ritzy high
school and the ritzy college) make in a year. Pretty
bizarre. I am of course pretty far on one end of the
spectrum and they on the other. Sad that part of my life
is more appropriate to their end, but whatever.

Both, though the unrest can happen anyplace. Also the huge
disparity in rich vs. poor - here it's bad enough, but there
it's scary - which of course causes both of those issues.

Yes. And because the number of "miles" one earns is tied
to the number of "qualifying dollars" you spend. Plus a
multiplier that means that the average person will now get
approximately 1/4 the "miles" expected, and being of high
status I'll get about 1/2 what I used to. A faster and worse
devaluation of programs I have never seen, and the media
haven't tumbled to it yet.

I told Annie that she should never, ever call me or my
friends that. She was taken aback.

Sloppy Joes Lasagna
Categories: main, Singaporean, Italian, American, pasta, cheese
Servings: 8

250 g lasagna noodles (20 sheets 7" x 3.5")
1/2 c marinara sauce
1 1/2 c grated cheddar
3/4 c grated mozzarella for topping
h - Sloppy Joes
350 g minced beef
150 g minced pork belly
1 md yellow onion, minced
2 cloves garlic, minced
1 green pepper, 1 cm cubes
1 1/2 c tomato puree
1 ts cumin
2 ts brown sugar
1 Tb cider vinegar
1 ts dried thyme
1 ds cayenne
1 Tb Worcestershire sauce
2 Tb bacon fat-infused oil

If not using no-precook noodles, cook them.

Fry onions in oil about 1 min on medium-high heat. Add
garlic, and fry till soft and caramelised, about 4 min.
Add peppers, and fry till softened, about 3 min.

Add beef, frying till the pink is almost gone, 4 min.
Add pork, frying for about 4 min and making sure to
break up the chunks.

Add tomato puree, cumin, brown sugar, cider vinegar,
thyme, cayenne, and worcestershire.

Start to assemble the lasagna. First slather 4 Tb marinara
sauce all over the base of the casserole.

Layer with a row of lasagna noodles above it. It's okay to
overlap the noodles a little. Layer with marinara sauce,
and the sloppy joes.

Layer with 1/2 c grated cheddar.

Repeat twice with lasagna noodles, marinara sauce, sloppy
joes, cheddar, so you end up with 3 layers of fillings.
Top with lasagna noodles, marinara sauce.

And finish off with a generous sprinkle of grated
mozzarella. Cover the casserole with a loosely fitted
aluminium foil and bake for 20 min at 200C/400F before
taking off the foil and baking for a further 15 mins at
190C/375F or until the cheese is browned.

Rest 5 min before serving.

If not eating right away, don't take off the foil, but
take the tray out from the oven and store in freezer for
use up to a week. To eat, defrost it in the morning
before you go to work by transferring it to the fridge,
and when you get home, heat it up for about 10 min at
190C/375F covered with foil, and 15 min uncovered.
