As we were so close, and it was not too far out of the way,
we decided to make a pilgrimage to either Taylor or Elgin
or Lockhart, three of the hallowed grounds of Texas barbecue.
I was sort of leaning toward Taylor, because I wanted to see
if Vencil Mares was still alive (rumor says yes, but it was
hard to tell when I saw him in 2012, and he would be 92 now)
at the Taylor Cafe, where he and not the cooking is the
national treasure, and also to check on the Mueller clan
(more on that checkered crowd later), whose food is superb
but whose personalities are said to be doubtful. But as
Lockhart has three of Texas Monthly's so-described fifty
best barbecues in the world and one of my top ten, and as
it was the least out of our way, we headed up there. Our
first stop was my top-ten place, Black's, where Kent Black
puts out some of the tenderest, most characterful brisket
I have ever slapped a lip over (Damon Runyon's term). I
ordered a pound of moist brisket and a rib. The rather surly
girl at the butcher block cut some meat that to my defective
eyes looked not too great, so I queried whether it was moist,
and she said, oh, yes, and wrapped the stuff up in butcher
paper so I couldn't see it before sitting down at table. It
turned out to be not so moist by any standard - actually
dry and rather ordinary. So I marched back (against the line,
which takes more balls than I usually have) and challenged
the girl with her handiwork. A small argument ensued, with
many witnesses, including, thankfully, the boss, who gave
the meat one look and then himself cut me at least a pound
and half of the best. I took the first order and, in view of
customers and staff, and threw it noisily in the trash. The
second order was perfect. It also prevented us from even
thinking about going to Kreuz or Chisholm or Smitty's.
