I used to use just plain hot sauce - a flavorful variety,
only moderately hot and moderately sour so I could use more
of it - such as Tapatio or (better) Tamazula. The Central
American sauces, such as the one I gave you a recipe for,
don't show well in the quantity I wanted to use. Now, if
the meat is fatty enough and smoky enough, I won't use
any adjunct, not even salt and pepper.

Whatever works. Remember that even though you are welcome to
stay the whole time, if circumstances forbid, we would be glad
to see you for whatever days you can be there.

Only 470 outlets! Which reminds me that there are
restaurants in some of the big barbecue cities -
Austin and Kansas City, for example, and they
price just one notch below the going rate. Austin
is a relatively expensive place to eat, and they
charge $13.50/lb for brisket (going rate 15, more
for the big name places); Kansas City is the worst
- they charge up to $15 (going rate is $16).

This used to be one of my favorite places to eat -
now, it's been renamed just "Joe's KC," the Okie
part of the operation withdrawing to Oklahoma and
D.C. We'll see what we shall see - going there on
a miles trip tomorrow.
 
Oklahoma Joe's KC BBQ Sauce
categories: sauce, Kansas
yield: 1 batch

3 c ketchup
1 c white granulated sugar
1/2 c brown sugar
1/2 c apple cider vinegar
2 Tb molasses
1 Tb Worcestershire sauce
1/4 ts liquid smoke
1 Tb salt
2 ts black pepper
1 ts onion powder
1 ts garlic powder

 
Combine all ingredients and simmer 1 hr, stirring often.
