I am thinking that my demise will be in such a hot,
humid climate, probably in Malaysia or the Philippines,
which are cheaper than Singapore to live in or to visit.
For example, the Doubletree KL where I will spend part of
January 2016 in costs $50-odd a night, whereas if I go
back to the Hilton or the Conrad in Singapore, the tab
will be five times that. I will probably spend one night
on the end or beginning of my trip at one of those
wonderful luxury hotels just for old time's sake (and
nostalgia for the financial competency of the past).

That's plausible, but the authentic version uses Heinz or the
equivalent chili sauce or even ketchup. I far prefer black pepper
crab, salted egg crab, or best of all the rather acrid in a
wake-the-taste-buds way white pepper crab. The Singaporeans,
having their long multicultural history, make full use of western
ingredients in a sort of fusion cuisine that evolved before the
concept was solidified.

Cereal pork
cat: main, found, killer
servings: 3

3 boneless pork portions (4 to 5 oz each)
1 egg
2 c multigrain Chex or similar, crushed
s, p
oil
1 sm apple, minced
1 sm onion, sliced thin
1/4 ts thyme
butter
1 Tb flour
1 c stock
1/4 ts thyme

Take the pig pieces and pound thin. Dredge in egg and then
crushed cereal seasoned with salt and a generous dose of
pepper. Fry in very hot oil, turning once, until browned and
crunchy on both sides. Remove and keep warm.

Meanwhile (or before), wilt apple and onion in a small
amount of butter, seasoning with thyme. Correct seasoning.

Pour off all but 1 Tb of oil from frying pan; add flour
and let brown a minute, stirring. Add stock. Season with
thyme. Bring to a boil and let simmer until of a saucy
consistency. A tablespoon or two of sherry, port, or
white wine might go well in this, but I didn't have any
handy.

Plate pork on warmed plates; top with apple mixture;
drizzle sauce over.

Coating things to be fried with crushed breakfast cereal
has a long history; it's become a big thing in Singapore,
where Nestum is used to make the famous cereal prawns
(aka butter prawns; though there may be some small
distinction between these, I find the terms interchangeably
used for pretty much the same dish).
