Did you mean Petro instead of "Perro"? The Iron Skillet restaurants at the
Petro Travel Stops are most excellent road food. Our local Love Brothers has a
McDonalds for a restaurant. But, right across the street is a Huddle House.
Guess which gets more business from the truckers.
 
All truck stops I have visited, even those without a restaurant provide showers
for truckers - free if they buy at least 100 gallons of fuel. If they don't
provide showers for the long haul guys to wash off the stink and sweat they
don't survive long as a stop for over-the-road trucks. Petro and Truckstops of
America both provide, in addition to showers, a coin-op laundry facility and a
driver's lounge - which can be nice when you are out of clean undies and a long
way from home. Or just want a place to unwind that doesn't stink of diesel
fumes and doesn't vibrate.  Bv)=

      Title: Huddle House Western Breakfast Wrap
 Categories: Five, Pork, Eggs, Cheese, Vegetables
      Yield: 1 Serving
 
      1    (10") flour tortilla
      2 sl Yellow cheese
      2 lg Eggs; scrambled
      2 oz Huddle House signature
           - Western Mix *
 
  Heat Western Mix. Scramble eggs. Place tortilla on round
  plate and microwave for 10 seconds. Place cheese slices at
  the left edge of the tortilla. Place Western Mix on top of
  cheese so that meat is in a straight line from the edge of
  the tortilla through the center. Place scrambled eggs on
  top of mix. Fold right edge of tortilla over, then fold
  bottom edge of tortilla so that the fillings are just
  covered. Roll tortilla from top to bottom to top, so that
  fillings are completely enclosed.
  
  Serve.
  
  * Huddle House signature Western Mix:
  
        8 oz Diced ham
        1 md Yellow onion; diced
        1 c  Bell pepper; diced
        1 c  Diced tomatoes
  
  Makes enough for several wraps or omelettes.
