Lum's served other things as well, such as the Ollieburger,
which is said to survive at Ollie's Trolley in Washington
(I have walked past it on the way to more eminent locations
but do not recall stopping in there). but dogs were the engine
of the chain's success, such as it was.

It's the root beer that got it started. It used to
advertise that there were 17 flavoring agents, of which
16 were natural (sort of like Ivory soap claiming to be
99.44% pure). I actually inquired of corporate why they
persisted in using ethyl vanillin (which was the 17th),
and they replied that they couldn't get the flavor right
with real vanilla.

What's Swiss Chalet about it? When I imagine a snug little
chalet on a mountainside, I don't imagine chickens pecking
around around it.

It's actually not a bad idea.

Yes. I tried it on someone's poutine once. My assessment,
while not altogether favorable, was less disparaging than
some that I heard, for example "calling that stuff Michigan
sauce may have harmed relations between the two countries
irreparably."

Is that a good thing or a bad thing?

Real Texas chili
categories: stews, main
yield: 1 pot

2 Tb vegetable oil
2 lb ground beef
2 md onions, chopped
2 garlic cloves, finely chopped
28 oz whole tomatoes
12 oz beer
5 Tb chili powder
2 jalapeno chili, seeded and chopped
1 Tb cumin
2 ts paprika
1 ts sugar
cayenne pepper, optional
cheddar cheese, shredded
red onion, chopped
avocado, sliced

1. Heat oil in 6 qt saucepan. Add ground beef, onions and
garlic and saute until meat is browned.

2. Stir in next 7 ingredients and bring to boil over
medium-high heat.

3. Reduce heat to medium-low and simmer, uncovered,
about 45 to 55 min.

4. Taste and season with salt, pepper and cayenne pepper,
if desired. Ladle into bowls. Garnish with cheese, onion
and avocado, if desired.
