Some more northern KFC trivia...

The KFC store is right beside the original Lenny Burger which is now
my Coldwell Banker office. The second floor used to be the owner's
apartment. (The second generation grew up there but the third
generation have mansions.)

Up until two years ago, they used to cook and ship by air large
(200-500 piece) orders to weddings, funerals and other gatherings in
many remote northern communities in the NWT and Nunavut. The three
diamond mines used to place 1000 piece orders once every 14 day
rotation. Len, the middle generation one, designed a sturdy but
light weight foil lined styrofoam shipping container so the food
would arrive hot. Corporate shut that operation down too citing
the possibility of food poisoning (it never happened once in 46
years), the quality factor (the chicken would steam in the container
and go soggy but the northern customers didn't care) and the
fact that they had a Yellowknife franchise not a two territory wide
one (although there are no other franchises anywhere they flew
to).

Back when Len air expressed those huge orders he was #1 in sales in
Canada and corporate got the 6% override. Yum brands isn't very
bright.

In Fort Smith and Hay River in the '70s, an airport employee would
take KFC orders. He would make arrangements for an envelope with
cash to be handed to the Pacific Western (predecessor company to
Canadian North) flight attendant and taken to Yellowknife. A person
from KFC was waiting at the airport with dozens of individually
packaged orders of chicken, gravy and fries and the flight attendant
would hand them the envelope with cash.

      Title: Camp Skillet Corn Bread with Cheese
 Categories: Quickbreads, Corn, Cheese, Camping
      Yield: 12 Servings
 
      2 tb Sesame seeds
      1 c  Yellow cornmeal,
           -stone-ground
    1/2 c  Unbleached white flour
    1/2 c  Whole wheat flour
      1 tb Baking powder
    1/2 ts Salt
  1 1/4 c  Grated pepper Jack cheese
      2 lg Eggs
      1 c  Milk
      4 tb Butter
      1 tb corn syrup
 
  Place sesame seeds in a dry 10-inch skillet over medium heat.
  Toast, shaking skillet until golden. Pour seeds into a large mixing
  bowl and set skillet aside. To sesame seeds in bowl, add cornmeal,
  flours, baking powder, and salt. Stir in cheese. Make a well in the
  center.

  In a 4-cup measure or medium bowl, whisk together eggs, milk, and
  corn syrup. In the skillet, melt butter over medium heat. Remove
  skillet from heat, and add 3 tablespoons of the melted butter to
  egg mixture. Pout mixture into well of the dry ingredients. Stir
  just until evenly moistened.

  Place skillet back on medium heat. Pour batter into warmed skillet
  with remaining butter in it. Cover tightly and cook over low heat
  for 25 to 35 minutes, or until firm on top and sides ate browned;
  a cake tester inserted into the center should come out clean.
  Don't peek before 20 minutes. Serve hot directly from the pan, cut
  into wedges, with butter.

  You can use bacon fat instead of butter. Tastes best when made
  over the coals of a wood fire.

  Makes 1 round bread, 12 wedges.
