Since the acidity doesn't kill worms one must be extremely cautious
(i.e. observant) with fresh water fish.

And truly fresh seafood is extremely expensive here. I had 2 sushi
lunches here last week and if you count the rice and vegetables as
virtually free I paid $5 per ounce for the fish!

Like bluefish, mackerel has to be VERY fresh to be palatable whether
raw or cooked. The only time I really enjoyed it, I pan fried it in
butter in a cast iron pan over a wood fire on the beach and it had
been alive just minutes beforehand.

I think that ceviche is perhaps the Spanish pronunciation and
cebiche the South American rendering of the word. There are other
spellings out there too.

My sushi lunches were from the small downtown Loblaw's across the
street from my office. The trays had been made up an hour or so
before at the larger newer suburban store which has an in-store sushi
station manned by three Japanese guys. You can custom order takeout
meals at the latter location but they make up numerous trays in
advance every day for sale at noon and 5 PM at both stores. Given
all that, plus our distance from the Pacific Ocean, the selection is
limited to "safe" items, of only moderate quality but pretty highly
priced.

My first tray was a volcano roll and 4 pieces of nigiri (1 butter-
flied, steamed shrimp, 2 salmon and 1 smoked white fleshed fish of
indeterminate species. It was $12.99 and left me wanting more (so I
had chips and gravy from KFC an hour later).

The second one was some other kind of roll with spicy mayo drizzled
over it and a shrimp harumaki (Japanese rice paper summer roll).
$9.99 and strictly snack size and not a meal.

They weren't bad, merely mediocre. I don't think I'll bother doing
that again soon though.

      Title: Strawberries with Cassis
 Categories: Desserts, Alcohol, Dairy, Fruit
      Yield: 20 Servings
 
      6 x  1 pint baskets strawberries;
           -hulled, halved or quartered
  1 1/4 c  Creme de cassis liqueur or
           Chambord
    1/3 c  Sugar
      2 tb Fresh lemon juice
      3 c  Chilled whipping cream
      3 tb Powdered sugar
 
  Combine first 4 ingredients in large bowl. Let stand at room
  temperature 1 hour, stirring occasionally. (Can be prepared 3
  hours ahead. Refrigerate.)
  
  Whip cream and powdered sugar in large bowl until stiff peaks
  form. Spoon 2/3 cup berries and some juices into each of 20
  balloon glasses. Top each with spoonful of whipped cream and
  serve.
