Understood. I found perfectly serviceable accommodations
with two double beds or a king for $50-odd on Hotwire.

That was Tom Pantley, whom I like okay and who is at least
part Guinea, part Dago, part Wop, and part Eyetye.

Tom Douglas ... well, I met him at a party for a girl Moya,
who had previously gone out with my friend Bruce. I think
Tom had his eye on her and thought I did likewise. Anyhow,
he wasn't particularly knowledgeable about food and obviously
didn't keep good control over his many kitchens, so he didn't
interest me. Plus he was like me an arrogant twit, so we
didn't get on at all.

Indeed. Another mouth or two to feed would have been welcome.

Canapes of foie gras, arugula, and cassis
categories: French, fancy, raw, appetizer
servings: 4

300 g raw duck foie gras
50 g arugula
8 lg sl country bread
4 onions
10 cl creme de cassis
15 cl wine vinegar
1 Tb balsamic vinegar
2 Tb walnut oil
s, p

Toasts gourmands de foie gras cru, roquette et cassis

Peel and mince the onions, putting them in a casserole
with the wine vinegar and the cassis. Bring to the boil,
stirring gently. Reduce heat and let the onions melt
on low heat for 20 min, stirring occasionally until
the liquid is evaporated.

Meanwhile, remove the crusts from the bread slices.
Toast them and cut each into two triangular halves.
Set aside.

Slice the foie gras into 8 equal thin slices. Frizzle
these for 1 min per side in a nonstick frying pan.
Drain on absorbent paper, then season them on both
sides. Let cool.

Remove the onions from the heat and let cool.

Combine the oil and the balsamic. Correct seasoning.
Wash and dry the arugula; toss in this vinaigrette.

Spread 8 toast triangles with the onion confit. Top
each with a slice of foie gras and a bit of salad.
Cover each with a second toast triangle.

Allow two sandwiches per serving. Serve at room temp.

Suggestion: Use a whole-wheat pain de mie for even
more flavor.
