We saw the Hawaiian fried rice go by at Kava's a
couple days ago - a big pound of rice with stuff in
it sided by four thick slices of fried Spam. Didn't
actually look that unappetizing.

I suppose, but where's the adventure in that. We could
try the vegetarian substitutes for bologna and hot dogs
(I doubt anyone has seen the need to make a vegetarian
version of Spam, though).

Brings us back to how useful knife skills are. I know that
it's phantom dollars, but the savings pay you upward of
$50/hr even if you're just an average slash and hacker.

I read that as "one needs freezer burn space."

This may be the first time I've ever seen a can of corn
cited in the same breath as the most wonderful food in
the world.

FOIE GRAS WITH SWEETCORN PANCAKE
categories: breakfast, fancy, offal, eggs, starter
servings: 6 to 8

70 g plain flour
12 ts baking powder
2 eggs
milk (see method)
230 g tinned sweetcorn, drained
a little groundnut oil
1 foie gras
salt and freshly ground black pepper

To make the pancake batter, mix the flour, baking
powder and eggs in a bowl and add milk, a little at a
time, to give a thick pouring consistency. Allow to
stand 1 hr, then add the sweetcorn and season well.

Heat a small blini or pancake pan until very hot and
add a film of oil. To make the pancakes, drop
spoonfuls of mixture on to the pan and spread very
thinly to about 5 mm thick. Cook for 1-2 min a side.

Cut the foie gras into long escalopes, about 5 mm
thick, 85 to 110 g each. Season well and fry in a
very hot, dry frying pan about 20 sec on ea side.

Serve the escalopes on the pancakes, absolutely plain.
