Most of those regimes get their bucks some way. I'm told
that one of the fundraising activities of ISIL is to
dynamite all those historic sites and then pick out the
choicest bits of rubble to be sold to art collectors.

Anyhow, there's no point in fussing about it one way or
the other, except in places where our whinges might be
heard by UNESCO or some other all-powerful agency (not
likely around here).

Clapshot (an Orcadian potato and turnip (swede) dish)
categories: main, side, vegetable, Scot, cheap
servings: 4 to 8

1 lb potatoes
1 lb swede
1 md onion, finely chopped
1 tb chopped chives
Butter and milk
Salt and pepper

Peel the potatoes and swede. Cut both into roughly the same size
pieces. Put into a deep pan with the onions. Add boiling water to
cover and simmer gently until the ingredients are just soft. Drain
off the cooking liquor.

Mash everything thoroughly, adding chives and enough milk and butter
to make a light consistency. Season well with salt and pepper. Serve
with cheese as a meal, or with haggis. Clapshot will accompany many
stews or fried meats.
