I wrote a blog long before the interweb became the interweb. It was called a
newspaper column. Its name was "The Dim View - Reflections in a jaundiced eye".
I have thought of reviving it as a web thing (blog if you will) - but blog is a
contraction of "web log". This (Dim View) would just be the rant of the day or
maybe something neat I saw/experienced. I've cooked in restaurants as a line
cook, run the kitchen. managed a fats food place, tended bar, had an honest to
actual sit-down and order off the menu place for a bit - which was a front for
the Polly Adler sort of place upstairs (speaking to your last option).

If I ever open a restaurant it will be like my friend, Jungle Jim's. He is the
chef in the actual meaning of the word - chief. He owns the joint, hires the
help, directs the operations, schmoozes with the customers, etc.

In other news - Mary Ann Rogers, (former) owner of The Chili Parlor (current
name, formerly The Den and Joe Rogers) is retiring for good at 71 (or so)
admitted years old. She has sold the place lock, stock, recipe and real estate
to a couple of optimists. No more contracts for deed, no more taking the place
back and fixing the carnage wrought by the defaulters. Take the money, smile
and walk away.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Dragon Den's Hot & Sour Soup
 Categories: Soups, Oriental, Pork, Mushrooms
      Yield: 4 Servings
 
    1/4 c  Raw pork; shredded
      3 tb Cornstarch
      1 tb White wine vinegar
  1 1/2 tb Sugar; to taste
    1/2 ts Black pepper
    1/4 c  Bamboo shoots; shredded
    1/4 c  Wood ears
    1/4 c  Mushrooms, sliced
    3/4 c  Tofu; diced or batons
      1 lg Egg; beaten
  1 1/2 ts Sesame oil
           Oil for frying
 
  Heat oil till quite hot. Add pork with 1 teaspoon
  cornstarch. Fry until white. Remove and drain on paper
  towels.
  
  Heat 3 cups water to boiling. Dissolve remaining cornstach
  in small amount of water.
  
  Add vinegar, sugar, salt, pepper, bamboo shoots, wood
  ears, mushrooms and tofu to boiling water. When it returns
  to a boil, remove from heat.
  
  Add cornstarch mixture. While stirring, pour in beaten egg
  and sesame oil. Add pork.
  
  Season to taste.
