The concept started out European, and the context of here 
is pretty Northern Hemispheric.

Au contraire, I can get it all kinds of places, plus it
is easy to make, both intentionally and unintentionally.

Most likely.

Correct. The recipes they give out are sort of like
artist's conceptions or menu photos. What they offer
has little resemblance. In a word, well three words,
the food sucks.

Jerry's Jambalaya
categories: Cajun/Creole, main, side
yield: 1 lg batch

2 oz Butter
1 c Onions, diced
3/4 c Rice
2 c Chicken stock
3 Bay leaves, whole
8 oz Smoked sausage, sliced
8 oz Chicken, diced in large chunks
1/2 c Celery, diced
1 1/2 Tb Garlic, finely minced
1 ts Thyme, fresh, chopped
1 ts Basil, fresh, chopped
1 ts Oregano, fresh, chopped
1/4 ts White pepper
1/4 ts Cayenne pepper (or to taste)
1 1/2 Tb Flour
6 oz Creole tomato sauce
1/2 c Green onion tops, chopped

In a medium ovenproof saucepan, melt butter, add 1/2 c
onions, and saute until onions are clear. Add rice, 
1 c chicken stock, and 1 bay leaf. Bring to a boil, 
then remove from stove and bake for 5 to 7 min in a 
450F oven. Remove from the oven and hold. Rice should 
be approximately half cooked.

In a heavy pot, render fat out of the sausage. Remove 
sausage; saute chicken in the same pot and remove. Saute 
the rest of the onions with celery, green peppers, garlic, 
and seasonings in remaining fat. Dust with flour (sprinkle 
about 1/2 Tb on top of vegetables to thicken and flavor) 
and cook 5 min. Add remaining chicken stock, cook 2 min, 
and add sausage and chicken, precooked rice, creole 
tomato sauce, green onions, and bay leaves. Simmer 
for 30 min or less or until done, but not too dry. 
Salt and pepper to taste. Serves six.

should never eat at a place called Mother's. In general that
seems to be true.
