So I've taken care not to infect my friends, instead taking my
germs on board planes and infecting the rest of the world ...

All I ask is that people leave their snippiness at least until
I get back. Turns out there may be fewer days without Internet
than I thought, and my watchful eye will be upon the echo with
no foreseen hiatuses of over 36 hours, if that horrible typhoon
behaves itself no worse than predicted.. I was at first a bit
apprehensive, but then I realized that though I'm traveling
toward the storm path on the 10th, by the time I actually get
there it'll be the 11th, and the forecast winds are less than
34 knots, which even the Airbus I'm riding can tolerate.

Benevolent dictatorships can actually be a good thing, but only on a
small scale. And even still care has to be exercised.

A good trade, best of both worlds - but I can see how unsupervised
trading can end up making inequalities of labor.

Ropa vieja
cat: Cuban, main, stew
servings: 3 to 4

3 lb lamb leg, bone in (to 4)
3 bay leaves (to 4)
olive oil
several cloves garlic, chopped fine
2 Tb tomato paste
1/4 c white wine (or more)
s, p
1 green pepper, 1/4" strips
1 red bell pepper, 1/4" strips
1 onion, sliced thin

Cut lamb into 1 lb pieces, or have butcher do it.

Put lamb and bay leaves in a large pot with water to
cover by 1". Bring to the boil, lower heat, and simmer
2 hr or until meat can be pulled from the bones
cleanly. Discard bones.

Saute meat in oil with garlic for 4 min in a large pan.
Add tomato paste gradually. Stir slowly. Season and add
wine. Cook a few minutes and then stir in vegetables;
cook until soft but not entirely limp. Serve hot with
white rice and black beans.
