==============
Hi Dave,

RH> OK, Steve didn't have a disk replacement. The disk was taken out and a
RH> "bridge" built between the two vertabrae, with a cage of filler bone.
RH> It's a lot more than I'd want to go thru but he only needed it done in
RH> one area. Disk replacment doesn't sound like a picnic either.

DD> To be clear - Georgia has had 4 separate fusions on her spine - which
DD> limits her mobility somewhat. Erin has had three disc replacements.
DD> Which have (in the long run) reduced her pain and enhanced her
 DD> mobility.

RH> Not a fun time for either of them but if it needed doing.............

DD> I just wish for Georgia's sake that the Israeli research facility that
DD> came up with the disc replacement technique was on the hop about 40
DD> years sooner. But, that's a futile wish - there probably was

I know, there are a lot of things we cold wish were developed earlier so
we could have taken advantage of them. My right knee was wrecked just
prior to arthroscopic surgery days so I've got limited use of it now.
But, I can walk on it (something the ortho doc initially doubted). If
I'd done the same thing probably 30 or so years before, I might not be
walking on it.

 DD> insufficient background or
DD> infrastructure at that time. I'm just glad that it was stumbled upon
DD> in time to help Erin. (others, too - but I don't know them).

Probably plenty of others; Steve may have indirectly benefitted. His
surgeon helped develop the hardware /technique used for the job he did
on Steve's back.

DD> To be honest I sometimes refer to the lottery as a tax on those who
DD> are bad at math. And I do argue with their methods of figuring the
DD> odds against .... the lottery people coming up with WAAAAAAY shorter
DD> odds than I and my Texas Instruments calculator get. In a 40 number
DD> pool in which one must match six numbers the odds, as I see it, should
 DD> be 1 in 40 X 39 X 38 X 37 X 36 X 35 (2,763,633,600) 2.76+ billion to
 DD> 1.

RH> IOW, a real long shot.

DD> True enough. I note that the Power Ball was hit last Wednesday and
DD> tonight's draw is worth *only* U$40 million to a single winner. Long
 DD> odds - but a huge payout.

And nobody won but I heard on the news tonight that now 75 numbers are
in play vs the 50 or so they used until a few months ago. Since they
added the extra numbers, nobody has won a jackpot. But, they keep
trying, and spending money that could be better spent elsewhere.

RH> She wasn't a deep south cook, that's for sure! Enough sugar in there to
RH> get my teeth itching; it's a corn cake, not corn bread recipe.

DD> In my experience southern cooks use a lot more sugar in things like
 DD> that than normal people.

RH> Down here, tea gets more sugar than corn bread.

 DD> Title: Skillet Cornbread
 DD> Categories: Pork, Breads, Dairy
 DD> Yield: 7 servings

 DD> 2 tb Bacon drippings
 DD> 1 1/2 c Stone-ground white cornmeal
 DD> 1/4 c All-purpose flour
 DD> 2 tb Sugar

RH> That's leaning toward more authentic. (G) I'd probably leave out or cut
RH> back on the sugar & salt and use yellow cornmeal.

DD> Here is *MY* (stolen from Emeril) Cornbread - no sugar at all

 DD> MMMMM----- Recipe via Meal-Master (tm) v8.06

 DD> Title: Skillet Cornbread -- 01
DD> Categories: Emeril, Breads, Pork, Chilies
 DD> Yield: 5 Servings

 DD> 1/2 lb Bacon; chopped
 DD> 2 tb Minced garlic
 DD> 4 Jalapenos; seeded, diced
 DD> 3 c Cornmeal
 DD> 1 ts Baking powder
 DD> 1 ts Baking soda
 DD> 2 ts Salt
DD> 1/2 ts Fresh ground black pepper
 DD> 3 c Buttermilk
DD> 2 lg Eggs; lightly beaten
DD> 10 tb Melted, unsalted butter

RH> I could live with this but would cut down the salt to half the amount,
 RH> or less.

DD> That depends on how salty the bacon is - and if I use the dripping
DD> from the bacon in place of part or all of the butter.

I'd use as much of the bacon drippings as I could, then make up the
difference with butter or canola/olive oil. Maybe just use a pinch of
salt but not a whole lot.

DD> Title: Cajun Cornmeal Mush (Couche Couche)
 DD> Categories: Grains, Dairy
 DD> Yield: 4 servings

 DD> 2 c Yellow cornmeal
 DD> 1/4 c Oil
 DD> 1 1/2 ts Salt; to taste
 DD> 1 ts Baking powder
 DD> 3/4 c Milk
 DD> 3/4 c Water

DD> A hot cereal made with cornmeal. Serve it just like
DD> oatmeal. It's tasty. It's different. You can make it your
DD> own adding your favorite mix-ins - raisins, maple syrup,
 DD> etc.

But not for Steve's breakfast! I was looking at various breads at the
Manna Ministry (part of the Sharing Shop) today but didn't pick any up.
All the "whole wheat" had a good bit of enriched (white) flour, a string
of chemicals a mile long and corn/corn meal. I did get some whole wheat
English muffins and some whole wheat sandwich thins that had none of the
above but a little bit of corn meal on the muffins. It's a small enough
amount that Steve isn't bothered with it.

Catch you later,
