I find a wide variation in competency at the supermarket. Some
of the staff are little more than machines, on the job at least,
but some appear to be as intelligent as you or me - I suspect
that seafood being a department that requires more expertise
might draw more toward the latter class, if the department is
expected to thrive, anyway.

Doing a search for "Purina lobster chow" actually gets a few
hits. Nothing useful, of course.

I generally don't trust such offerings: store-made fried
chicken is the thing that most frequently earns my nose
up or thumbs down.

Pumpkin Lasagna
cat: supermarket, gross, pasta, main, capital-happy, could be fixed
yield: 1 pan

13 1/2 oz cn Del Monte Spinach, drained
1 Tb Extra Virgin Olive Oil, divided
1 lg Fresh Sweet Onion, chopped
4 oz cn Weis Quality Mushrooms, drained
3 Fresh Garlic cloves, minced
1/2 ts salt
1 c Weis Quality Alfredo Sauce
1/8 ts Gound Nutmeg
3/4 c Weis Quality Greated Parmesan Cheese
1.4 ts Ground Black Pepper
15 oz Weis Quality 100% Natural Part-Skim Ricotta Cheese
15 oz cn Weis Quality Pumpkin
1/4 ts Dried Italian Seasoning
15 Weis Quality Lasagna Noodles, cooked
- according to package instructions

Preheat oven to 350F.

Heat 2 ts olive oil in a large skillet over medium heat.
Add onions and saut until golden brown, 5 to 10 min.
Add mushrooms and cook until browned, about 5 min.
Add garlic and Italian seasoning, and cook for 1 min.
Stir in the spinach and heat through; set aside.
Mix pumpkin and ricotta cheese in a large mixing bowl.
Stir in Parmesan cheese, salt, black pepper and nutmeg
until well combined.

Grease the inside of baking dish with remaining olive oil.
Spread 1/2 c Alfredo sauce over the bottom. Top with 3
noodles, covering the bottom of the dish.

Spread 1/4 of the pumpkin mixture over the layer of
noodles and scatter 1/4 of the spinach mixture over the
pumpkin. Repeat layers of noodles, pumpkin and spinach,
until you have 4 layers of each. Top with the remaining
noodles; spread the remaining Alfredo sauce over the top.

Cover with a sheet of foil and bake for 45 min until
bubbling around the edges. Remove foil; top with remaining
Parmesan cheese and return to the oven for about 15 min,
until lightly browned. Rest for 15 min before cutting.

Serving Suggestion: Serve with a tossed green salad
drizzled with olive oil and balsamic vinegar.
