In the US, the rooms seem pretty evenly divided between two
singles and one king. Two doubles or one queen are variants.
I have in recent memory not seen a room in the US that offers
but one single bed, or even one double bed, except in a
private house, and even then, the ones aspiring to full
B&Bship have upgraded to more expansive sleeping quarters.

Lilli and I have begun to economize by renting just one room
- opting to spend a bit more to get a suite or at least a
"deluxe" room; we count on getting a king or two singles;
almost always there is plenty of space, and on the rare
occasions otherwise there is a substantial couch or at
least comfy chair for me to withdraw to.

Our experience in Asia is that the standard for budget or
rural accommodations is two cots pushed together with not
a substantial amount of extra room to separate them;
this is only a mild embarrassment as we have learned to
operate in relatively narrow spaces when we need to
(though the two cots make not more room than one queen,
the separate bedding seems to make us manage better). In
the big cities we've mostly stayed in Western-style hotels
with Western-style accommodations.

I've found that the interface at Janis's is no longer so
intuitive to me as it used to be. When I get back from
my wanderings I'll inquire.

Mexican chocolate pate with vanilla bean cream
categories: dessert
Serves: 6

h - For the chocolate pate
1 qt cream
1 orange, zest of
1 pasilla chile, seeds discarded, roughly torn
4 whole cloves
2 pieces star anise
4 egg yolks
2 whole eggs
6 oz unrefined sugar
8 oz high-quality bittersweet chocolate, chopped
h - For the vanilla bean cream
1 c heavy whipping cream
1/2 vanilla bean
1/4 ts ground cinnamon
h - For the garnish
Muscovado sugar
Mint sprigs

For the pate. Combine first 5 ingredients and simmer over
very low heat until fragrant. Place chopped chocolate
into a heat-proof bowl. Strain hot liquid over the
chocolate. Whisk together the yolks, eggs and sugar
rapidly in a separate bowl until the mixture is light
and frothy. Slowly temper half of the chocolate mixture
into the egg mixture. Combine all remaining ingredients
in a heat-proof bowl and cook over a double-boiler for
15 min, whisking continuously. Strain the mixture; pour
into a cup and set aside to chill.

For the vanilla bean cream. Combine all ingredients and
whip until the mixture forms soft peaks.

PRESENTATION: Remove the pate from the refrigerator
1 hr before serving. Top each pate with a big dollop of
vanilla cream. Garnish with muscovado sugar and a mint sprig.
