MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Solar Oven Beans & Rice
 Categories: Vegetables, Beans, Rice, Chilies
      Yield: 3 Servings

           Butter for sauteing
      1 lg White onion; diced
      2 cl Garlic; chopped
      1 lg Bell pepper; chopped
      1 lg Tomato; chopped
      2 c  Brown rice
     15 oz Can black beans
      1 ts Cumin seeds
      1 ts Crushed red pepper

      1    Chile; seeded, chopped
      4 c  Broth
           Chopped fresh cilantro;
           - garnish

  Equipment: You'll also need a dark, light pan with a
  transparent lid.

  First, make sure it's sunny, and no clouds are in sight.
  Place the solar cooker out, focused toward the sun. Adjust
  the height and any reflectors to minimize any shadows inside
  the cooker.

  Meanwhile, heat the pan on the stove over a medium heat with
  the butter. Saute the diced onion until soft - about two
  minutes.

  Add garlic, pepper, and tomato and saute for a further few
  minutes-until the pepper starts to brown. Add the beans, the
  spices and the rice and stir until all the ingredients are
  coated in the oil.

  Now add the broth, stir, and replace the lid. Now just turn
  up the heat, bring it to the boil, and take the pan
  carefully outside. Check that the cooker is suitably
  hot-mine gets to about 320 or 340 degrees in direct
  sunlight-and place the dish in the solar cooker. (Be
  careful, my cooker has a shelf that pivots to remain
  balanced-it can be a little tricky to get a full pan to
  stay still!)

  Now all you have to do is kick back, open a beer, and
  remember to occasionally repoint the solar cooker toward the
  sun. How long it takes to cook will vary on the temperatures
  you are reaching, and the thickness of your cookware-but
  mine was done in about an hour. It doesn't hurt to leave it
  longer-it seems almost impossible to burn stuff in a solar
  oven.

  Once the rice looks ready, remove it from the oven, season
  it, and stir in just a dash of butter. I like to sprinkle
  over some chopped cilantro to finish it all off. Then serve
  it to your guests-and make sure they know it was cooked
  (mostly) using the power of the sun!
