Lyndon B. Johnson (incumbent) won.
Jimmy Carter (incumbent) lost.
Bill Clinton (incumbent) won.

That is a record of 5 wins, and 1 loss.

Your statement if filled with inaccuracies.

Woodrow Wilson was Democrat.
The others you listed were Republicans.
Not all listed failed to win a second term.
McKinley won a second term, but was assassinated.
Teddy Roosevelt easily won a second term.
Woodrow Wilson easily won a second term.
Calvin Coolidge easily won a second term.

Let's look at your complete list -

William McKinley was Republican.  Died in office.
Teddy Roosevelt was Republican.  Lost as a third party candidate.
William Taft was Republican.  Big-time loser only serving one term.
Woodrow Wilson was Democrat.  Easily won re-election.
Warren Harding was Republican.  Died in office.
Calvin Coolidge was Republican.  Easily won bid for second term.
Herbert Hoover was Republican.  Lost his shirt to FDR.
