Ärende: Sweet Potatoes

Björn Felten wrote an interesting message in another echo
that should be of interest to food lovers everywhere -

Ouch! That can't have been in Louisiana or it's the vicinity --
the No1 sweet potato growing state of the USA.

I pity all of you who haven't tasted a real sweet potato. Whether it's
grilled, fried, mashed or whatever -- it beats ordinary potatoes hands
down.

It should be noted that sweet potatoes and yams are not the same thing.

Most sweet potatoes (95%) found in grocery stores in the USA are the
beauregard variety.  The state of Louisiana does grow lots of sweet
potatoes.  Lots and lots of sweet potatoes.  But sweet potatoes can be
grown in many places.  Not just here.

Really easy to grow.  And they don't take long to mature.  All you
need to get started is a sweet potato, a jar, and some soil.  Along
with water, and sunlight.

There is one variety of sweet potato that I especially like, but
hard to find.  It is purple.  Purple on the inside, with a purple
skin.  Really sweet, does not need added sugar at all.  In fact,
adding sugar would spoil the flavor.  These sweet potatoes are that
good.

Best way to bake a sweet potato is 350 degrees Fahrenheit for 30
minutes.  For small sweet potatoes it is not necessary to poke holes
in skin, but I do so anyway.  No real need to wrap them in anything.
Just put them on a cookie sheet and bake.  30-40 minutes, depending
on size.

Some folks prefer to nuke `em in a microwave, but doing so strips
out all the vitamins.  Also changes the taste.
