BM> They didn't invent anything that enabled them to increase their
BM> survival rate and overrun their own and others' lands; that's the main
 BM> thing, I'd guess.

Very important. The low population density was deliberately maintained
at a level that the country could support indefinitely.

BM> Aborigines are human. All you have to do is to encourage them to
BM> adopt modern, civilized ideals and standards. They, too, will lose
 BM> their grasp.

Regrettably that is what has happened to most modern aborigines. They
live in a white man's society and have assumed much of the life style.
The rules under which they have lived for thousands of generations no
longer apply. The best that can be hoped is that some, at least, of
those rules of respect for the land are adopted by the rest of the
country's population.

Only yesterday a serious proposal was made that sheep farmers in
marginal rainfall areas give up sheep and farm kangaroos, which are
much less destructive of the natural vegetation. At present kangaroos
run wild over grazing areas and are culled by professional shooters to
prevent the population becoming excessive. As the meat is becoming
more popular the price is rising, and it is now as expensive as beef.

      Title: KANGAROO RUMP ROAST
Categories: Aussie, Kangaroo, Game, Meats, Roasts
      Yield: 5 Servings

      5 Potatoes, Dobson variety
           -or any soft flesh type
           -may be substituted.
      5 Pumpkin, Queensland blue
      2 tb Oil
    500 g Kangaroo rump
    100 ml Wine, red
      1 ts Mustard, blended

Peel potatoes and leave whole; leave skin on pumpkin and cut into
large serving pieces and place both potatoes and pumpkin in a
roasting pan with oil in a hot oven for 1/2 hour. Remove vegetables
from roasting pan and turn oven down to 250^C.

Place kangaroo roast in pan and quickly sear both sides. Turn oven to
200^C, return vegetables to the pan and cook meat and vegetables for
  approximately 20 to 25 minutes.

Rest meat for at least 10 minutes before serving finely sliced
  kangaroo with vegetables.

While the meat is resting, reduce the roast juices with a little port
or red wine and mustard. Spoon over meat.

NOTE: "Because there is very little fat on kangaroo, it's important
to rub the meat with virgin olive oil. If you have time, sprinkle
freshly ground pepper over the oil and meat and marinate until ready
  to cook."
"Once I marinated kangaroo roast in walnut oil and peppercorns
and it was brilliant. However, because it's important to keep the
natural flavour of the kangaroo, don't overdo any marinade with herbs
  and wines.
"I cook roasts in the oven, but some believe a Weber
barbecue/smoker is better. Whatever method is used, always remember
that you must never over-cook kangaroo. It's best served rare to
medium after it has rested for at least ten minutes." -JR from A
