There would certainly not be any limits on numbers, but since the
introduction of myxomatosis and calesivirus, the rabbit population has
dropped considerably.  Some rabbits are farmed, and there are still
areas where uninfected rabbits remain and can be trapped.  The farmed
rabbits are tenderer and fatter, but the flavour of the tough, wild
bunnies is superior, and I particularly like that unique taste.

All these animals are safe to eat, as Australia is free of most
diseases such as rabies, foot and mouth and mad cow.  I would not
expect camel to be common in USA, but I am surprised that venison is
not a regular in your restaurants, as deer would be natives.  What
about horse meat?  Although not commonly sold here, I have found it in
a restaurant in Darwin.  And I would expect alligator to be a regular
menu item, at least in your Southern states.  I could take you to
several Adelaide restaurants which have a couple of crocodile dishes
listed on the menu.  Ten years ago I only knew one, Vietnamese place
which routinely served it, stir-fried.

      Title: Oven Baked Crocodile
 Categories: Alligator, Australian, Chilies, Cod
      Yield: 4 Servings
 
    1/2 kg Crocodile Fillets
    1/2 c  Lemon Juice
    1/4 c  Soy Sauce
      2 tb Chopped Parsley
      1 c  Olive Oil
      4 dr Tabasco Sauce
           Salt & Pepper to taste
      1    Clove Garlic crushed
      1 c  Breadcrumbs or Flour
 
  Place Crocodile fillets in a shallow pan. Combine lemon juice, soy
  sauce, parsley, olive oil, Tabasco Sauce, salt, pepper and garlic.
  Mix well. Pour over fillets ond let stand 4 hours. Turn pieces
  occasionally. Then drain fillets and roll lightly in breadcrumbs or
  flour. Shake off excess. Arrange steaks in a greased baklng dish and
  bake in a moderate oven (180 degrees C) for about 1 hour, or until
  tender.
