In older-established societies people are more reluctant to move out of
core groups, particularly where such groups are fairly large.  In
Darwin, however, less than 1/4 of the 100,000 population would have
been born there, so there is far more mixing, and indeed intermarriage
between diverse ethnicities.  Such intermarriage stimulates cultural
exchange, as it is normal for both spouses to attend social functions
held by their respective religious or ethnic groups.  When I have been
in Darwin at those times we all go to the Indian Festival of Light to
watch the dancing and eat the food.  Likewise to the Filipino Barrio
Fiesta and the Greek, Vietnamese, Chinese, Italian, Timorese,
Indonesian, etc etc celebrations.  There is always something going on
there, and they are always happily welcoming and open to all.

      Title: Chau Chau De Pepino
 Categories: East timor, Groundmeat, Beef
      Yield: 4 Servings
 
           Ground meat (beef)
           Pepino (cucumber), remove
           Seeds and slice thin.
           Ginger (grated or diced fine
           Not powder)
           Onion (one medium)
           Soy sauce
           Salt
           Turmeric
           Garlic
           Oil (mild, peanut or
           Canola)
 
  Saute onion and garlic in oil. Add meat and ginger, salt, turmeric.
  Season with soy sauce. Add cucumber when meat is almost done, cook
  until cucumbers are soft (or crunchy). Serve with vinho branco.

(Glen's note.  I have eaten this, in Darwin.  It uses lots of ginger
and turmeric, finishing aromatic and yellow.  Is good.
