Catastrophic indeed. It turns out that the speed of sound in
salt water is something like 2500-3000 mph.

Well, there are several bases down around there, and I have
since read about several types of aircraft all or part of
which may have exceeded the speed of sound during that time
frame. So there are possibilities, but I still surmise that
they are not likely to have been publicized at the time or
later.

Strawberry-almond shortbread napoleon with basil and balsamico
cat: dessert
servings: 6

1 c butter
5 oz sugar
1 c whole toasted almonds, skin on
2 c flour
salt
2 Tb sliced almonds, skin on, lightly toasted
2 c strawberries, in wedges
1/4 c simple syrup
1 ts lime zest
1/2 c creme fraiche
1 1/4 c heavy cream
1/2 vanilla bean, pulp of
2 Tb Lucini Gran Riserva Balsamico
2 Tb basil syrup
2 Tb fresh baby basil leavaes

Shortbread: cream butter and 6 Tb sugar until light, fluffy, and
almost white. Process whole almonds 2 min or until very fine;
add to butter mixture along with flour and 1 pn salt. Mix until
just combined. Roll dough out between sheets of plastic wrap
to 1/8" thickness. Lay on sheet pan, still covered with wrap,
and refrigerate 30 min. Remove plastic, place dough on cutting
board, and cut into 18 3x2" rectangles. Place on parchment-lined
sheet pan and lightly press 4 or 5 almond slices on each piece.
Bake at 350F until golden, 15-20 min.

Toss strawberries with simple syrup and lime zest. Set aside.

Whisk creams to soft peaks with remaining sugar and vanilla.

Assembly: Place a small dollop of vanilla cream on each of 6
dessert plates. Place a piece of shortbread on the cream; add
a large dollop of cream, then another piece of shortbread, then
repeat, ending with cream. Spoon strawberries around. Drizzle
balsamic vinegar and basil syrup around strawberries and
sprinkle with basil leaves.
