=======================
Hi Michael,

RH> Yankees, scaliwags, carpetbaggers,. etc alll helped to bring subtle
RH> changes to southern cooking, ewspecially in the urban areas. The

ML> I'm not interested in carpetbagger food when the real thing is
ML> available. I can eat northern food any time. I cannot get good
 ML> fried chicken any time.

But you have to look deeper and deeper into the rural south to get it
now. Last night after the Christmas cantata, one of the couples in it
and her mom put on a feast for those involved. A couple of the most
outstanding food items were a crab stew and shrimp jambalaya. Completly
opposite tastes but both utterly delicous.

RH> rural, deep south still holds a lot to the old ways of cooking/eating.

ML> Yup, the fattiest, most disgusting possible things, i.e. ones
ML> that tend to love (not black-eyed peas, though).

Well, black eyed peas are good for things like Hoppin' John. In small
amounts, they're not bad by themselves.

RH> with a lot of grease. The newer south is breaking away from that to
RH> some extent to be more health concious.

 ML> No fun there.

No, but the food cops are trying to bring the south in line with the
rest of the country mild &/or bland. There's enough northerners that
want to eat like they do at home no matter where they are that the south
has to fo along with the rest of the country--to some extent, not
totally tho.

ML> The other thing, of course, is that I like fried food and
ML> vegetables cooked with a ham hock and when in the south
RH> I can go for most any cut of pork but can't cook it at home.

ML> So Steve hasn't gotten off that, eh. I thought you were making
 ML> some progress.

Two steps forward, one step back. I got some bacon Saturday when I went
shopping so I could make my maternal grandmother's green bean dish; he
helped me pick out a nice looking package. But, I think I'll get all
that isn't used in the beans for myself (unless I can hide it in
something).

RH> I couldn't have done it otherwise and none of us had mountain climbing

ML> I applaud that more people can access this now, but it used to
ML> be so pristine, and I'd be kind of saddened if I went back there.
ML> I'm not completely sure that it was a good idea to build a
ML> trail (I presume approaching from the 500-ft side).
RH> Draws more money into the local economy.

ML> I'm not sure about that. Depends how many eco-tourists have
ML> been displaced by the cruise ship guys. And anyhow, the thing

The cruises offer a number of eco tours or psuedo-eco tours. I guess
the favorites are being vanned up to the top of Haliakala to see the
sunrise (hopefully), then biking down and doing the zip line thru the
trees.

ML> was really nice when viewed from afar.

Yes, can't do too much to destroy a distance view.

 ML> Pumpkin bread
 ML> cat: holiday, starch
 ML> yield: 2

I've got another loaf of bread in the machine. The first one I made
here was a total brick; this time I combined a sack of Gold Mdeal ww
flour with the Hodgeson Mills ww (most of a sack) and will hopefully
have better results.
