I agree to a great extent, except that I see that the
simple preparation is often a result of the dearth of
burnables on the islands and often at odds with bringing
out the natural flavors.

You've seen my eyes - they're, if not easy to please,
certainly not easy to displease. The beauty of a dish of
food for me is about 99% in the aroma and taste. I could
be served something that looked like a dog turd on a
plate, and if it tasted good I'd prefer it to a beautiful
serving of Japanese food of most kinds.

 Even urban dwellers are

In their kitchens perhaps. I'm not thrilled with the general
Japanese ecological consciousness, which appears to me to be
down in the dumps with the Chinese, Americans, and Brits, in
approximate order of horrendousness.

 JW> rarely preserved. I think the cuisine has a lot going for it.

Everything except flavor ...

Mochiko Chicken Recipe
cat: Hawaiian, main
servings: 6

2 lb chicken thighs, deboned
4 Tb mochiko (Japanese sweet rice flour)
4 Tb cornstarch
4 Tb sugar
5 Tb shoyu (soy sauce)
1/2 ts salt
1/2 ts MSG
2 eggs
1/4 c green onion, chopped
2 cloves garlic, minced or crushed

Debone chicken and cut each thigh into 2 or 3 pieces. Mix together
remaining ingredients and pour over chicken. Stir to mix and marinate
at least 5 hours. Heat about 1 inch of salad oil in skillet. Fry
pieces of chicken taken from marinade in sizzling oil. Turn to brown
evenly all sides until chicken is thoroughly cooked. Serve hot or cold.
