  We especially like "Sundays at Moosewood" which is full of ethnic
  dishes from many cultures.   We've made several Ethiopian recipes from
  there.   Another favored book on a similar theme is "The Frugal
  Gourmet on Our Immigrant Ancestors" by Jeff Smith.  We got our
  carnivoire Ethiopian recipes from there:-}}

   Good points -- and according to our mapping program, it is a little
   bit more than an hour from you.

   Have you ever been to Jewetts Cheese, about an hour due north of you?
   They age cheddar cheeses, from a few years up to 10+ years.  We've
   ordered them a couple of times and they were a treat.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: One Pan Potatoes And Chicken Santa Fe
 Categories: Microwave, Vegetable, Poultry
      Yield: 4 servings
 
  1 1/3 lb Potatoes; 3/4"cubes
           -(4 medium)
      1 lb Chicken breasts; 3/4"cubes
           Boneless, skinless
      2 tb Olive oil
      1 c  Prepared tomato salsa
  8 3/4 oz Can whole kernel corn
           -drained
 
  Place potatoes in 1-1/2 to 2 quart microwave safe dish. Cover with
  plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes
  until just tender.
  
  In large nonstick skillet over high heat toss and brown chicken in
  oil 5 minutes. Add potatoes; toss until potatoes are lightly browned.
  Add salsa and corn; toss until heated through.
  
  Makes 4 servings
