Had dinner with Nicholas the other day, and we do the
tradeoff thing, each preparing a little plate for the
other. I spent extra time in the dim light (it was one
of those expensive dim places) looking through to make
sure that I hadn't given him any duck fat or skin,
because I wanted to keep it all for myself.

Well, the northern teams play half their games at
home, in northern climes, plus more in other northern
cities. The southern teams play half their games at
home in the heat, plus others in other southern cities.

So come the Series, I imagine the northern teams would
be somewhat better used to the cool end-of-season weather.

Question: now that the season is so elongated, will the
next postseason hero a la Jackson be called Mr. November?

That's becoming par for the course. What it means is that
the already crowded overheads will become even more
stuffed, with more aggravation to more people. I remember
my last trip on Delta, where I am nobody; boarding in
zone 7 or 8 put me in great fear that I wouldn't have any
overhead bin space (there was some, but it wasn't
convenient, and I really pity those in zone 9 and 10 - I
think it went up that high). And the inevitable will
happen, someone late in the boarding will have just two
tiny little bags, and there won't be room for one of them,
and he will have to check one, and it'll cost, and awful
things will happen.

Not sure that I'm super enthralled with looking
at organs ... though back in younger days I'd
occasionally spring for a spicy magazine,
particularly when a friend of mine was in it.

Espagnole
cat: sauce, basic, railroad
yield: 1 gallon

2 veal shin bones
paprika
2 Tb melted fat
2 c carrots sliced thin
2 c onions sliced thin
s & p
2 bay leaves
4 allspice berries
1 garlic clove, minced
1/2 c flour
28 oz can tomatoes
6 qt beef stock

Remove meat from bones; cut small. Crack bones.
Dust meat and bones with paprika in a roasting
pan; drizzle with fat and roast at 400F for 1 hr.
Add vegetables and spices and dust with salt and
pepper. Continue to roast 30 min. Dust with flour
and roast again until flour is browned. Remove
everything except accumulated fat to a stockpot.
Add tomatoes and stock; bring to a boil, reduce
heat, and simmer 10-12 hr. Cool and strain.
Refrigerate until needed.
