     Title: A16 Chocolate And Sea Salt Shortbread Cookies
Categories: cookies, chocolate
  Servings: 40

  1 3/4 c  plus 1 tb flour
    1/2 c  plus 1 tb unsweetened cocoa
           powder; preferably natural
    3/4 ts baking powder
      1 c  unsalted butter; room temp
    3/4 c  sugar
      8 oz bittersweet chocolate (70%
           cacao); coarsely chopped
      1 ts pure vanilla extract
    3/4 ts sea salt

In a large bowl, sift together the flour, cocoa and baking powder
and set aside.

In a stand mixer fitted with the paddle attachment, combine the
butter and sugar, and beat on medium speed for about 2 minutes, or
until pale and smooth. Switch to low speed, add the flour mixture in
3 additions, beating after each addition until just incorporated.
Add the chocolate, vanilla and salt and mix briefly just until
incorporated.

Divide the dough in half. Place half of the dough on a lightly
floured work surface. Using your fingers, and widening the distance
between them as the dough extends, roll the dough back and forth
into a log about 1 inch diameter. Repeat with the second half. Wrap
the logs separately in plastic wrap and refrigerate for about 1
hour, or until firm.

Position the oven racks so that one is in the center of the oven and
the other is in the upper third, then preheat the oven to 300
degrees. Line 2 baking sheets with parchment paper or lightly butter
them.

Using a sharp knife, cut the logs into 1/4 inch thick rounds, and
arrange the rounds on the prepared baking sheets, spacing them about
1 1/2 inches apart. Bake, rotating the sheets once from front to
back, for 15 to 20 minutes, or until baked through but still soft.
Transfer the sheets to wire racks. The cookies will firm up as they
cool.

Store in an airtight container at room temperature for up to 1 week.
