====================================================================
Hi Janis,

JK> > when we were kids and never spent the holiday with us, having their
JK> own > families to celebrate with.

JK> Understand. We were happy to see everyone since 'they' all lived in
JK> the Scranton/Dunmore PA. area, and we were in NY.. Though my parents
JK> would bundle us all up and make the trip to PA. each weekend, in my
JK> mind it still wasn't the same as "living" close to Grandma's house
 JK> (g).

Lucky you. When our girls were growing up, they were the only ones of
their cousins that didn't live within 15 miles of Steve's parents. It
made seeing their cousins more special. For a while, they saw one of
my sisters older son regularly when we lived in AZ. Now they see all
but I think the youngest (and maybe him, I don't know since he's 13) on
Facebook. (G)

>> besides that, our Italian Thanksgivings were tremendous amounts of
>> food (any holiday at Grandma's or Mom's was). First the
>> antipasto...(roasted red peppers, caponata, anchovies, black olives,
>> stuffed olives, etc. etc.).. then the meat and vegetables.. turkey, or
>> roast lamb or whatever, greenbeens, spinach, salad... then the pasta
>> (ravioli, or lasagne).

JK> > I'm stuffed, just reading about it!

JK> It's the way my Mom always cooked.. and if you ask Ron, he'll tell you
JK> I inherited that umm.. cooking for armies mentality (laugh). I

My dad's sister was like that too; he said it came from their mom before
her heart got so weak she wasn't able to do as much.

JK> remember when my daughter was in college, and she and her girlfriends
JK> would stop by our house.. The first thing her friends would do was
JK> check out the leftovers - "Ooh, can I eat this??" (bg). Bet you had
 JK> similar things happen.

Somewhat so. More than how I was brought up; I think less than how
Steve was.

>> the pediatrician, he assured me that my son would not starve to death,
>> and that a diet of peanut butter and 'whatever' was ok (grin). That
>> was hard to listen to.. (vbg). But I didn't have much choice there.

JK> > And he turned out OK, didn't he?

JK> Kinda (vbg).. he is still a very picky eater. If he can avoid it, he
JK> won't eat meat, and he's not very adventurous towards dishes he hasn't
JK> tried in the past. A plate of anything Italian is FINE though as you
JK> noticed at the picnic :)

Sure did! I think Charlotte was the only one who didn't have any
lasagne but made up for it in the # of meat balls she had. (G) I'll be
teaching her how to make them next week.

 JK> > Deborah went on a pb&j sandwich spell
JK> > for a while when she was 4--but only for lunch. By letting her have
JK> her > way for lunch, she was willing to have whatever we had for
 JK> breakfast and > supper.

JK> Matt was happy with the breakfasts I made him, it was lunch and supper
JK> that were the problems... especially "green" things (bg).

You have to be creative. Pea soup became green soup, tomato was red
soup. Broccoli was trees, cauliflower became brains. (G)

>> LOL that is the truth.. :) :) :) It is definitely the boonies out
>> here..East Podunk looks like downtown compared to here :)

JK> > Go up to the Adirondacks for some real out of the way places. (G)
JK> Then > you'll think Windsor is almost NYC.

JK> Been there and know JUST what you mean Lol.. :)

Ever been in far west TX or some areas in AZ? You feel you're about the
only ones on the planet in some of them--and miles of miles to go to get
to any sort of civilisation.

>> This is for a crowd no doubt.. I put most of the eggs in the salad
>> chopped up, but reserve about 4 of them to slice and put on the top...
>> depends on how big your bowl is.

JK> > Sounds about right--and a big salad. This one makes enough for 6-8
 JK> or > so servings.

JK> You can add about 1 tablespoon or so of djohn mustard to that recipe..
JK> gives it a nice zing, but not too spicy.

Hmmmmmmmmmmmm, interesting thought. We don't keep djohn on hand on a
regular basis; I'll buy it if I need it for a recipe & we'll gradually
use it up.

>> lunch. Still have a few chunks of pork roast left..

JK> > Something hot on a coolish day? Sounds good here.

JK> Last night, we had a salad made from pea greens, baby beet greens, and
JK> baby lettuce leaves. The way I plant most green things is to way
JK> overload the 'row' and then thin as the spring goes. Eventually those
JK> over packed rows will be down to about what the seed packet suggests
 JK> :)

Meanwhile, the thinnings make good salads.
