Hi Janis,

>> > I'll sub in whole wheat flour here.

>> I made one pizza with all whole-wheat flour.. that was the end of that
>> idea! you had to eat it with a fork since I neglected to put some
>> gluten or bread flour in it :) :) Just fell apart as soon as you
>> lifted it.

JK> > Hmmmm, it would be interesting to know what you did wrong.

JK> Hmm.. maybe it was the "kind" of whole wheat flour I used for that
JK> one.. instead of buying regular whole wheat, that week I'd bought King
JK> Arthur's whole wheat that is "lighter" in color and grain than regular
JK> whole wheat.. It's not bleached, but I think the wheat they use is not
JK> the same as they use for "regular" whole wheat. I just wanted to see
JK> what the difference was.. I guess that's it if when you make whole

Not buying the flour, I'm not that familiar with the "white" wheat. I
have bought KA from time to time but the whole wheat only. It may be a
softer wheat used to make it vs the hard wheat of regular whole wheat
flour and would have less gluten then. The gluten gives structure to
the yeast baked goods.

JK> wheat pizza you don't have that problem :)

Live and learn experience.

>> I generally use my kitchenaid mixer for bread dough.. My daughter

JK> > I have an Oster Kitchen Center and never been happy with the way it
JK> > kneads dough. Steve's been making noises about replacing it with a
 JK> KA > or Viking.

JK> That's the same one I had before getting the KA.. and you're right, it
JK> doesn't make as nice a dough. Not enough uumph or maybe it's the
JK> planetary action of the KA that makes the big difference. This is my

I suspect it's both but I always said my Oster lacked the ooph to do a
good kneading job.

JK> second Kitchen Aid.. the first one lasted me from about 1985 until
 JK> about 2005.. that's a pretty long time :) These days though KA isn't
JK> making them as tough as they used to though, so you might want to
JK> really check out a Bosch or the Viking as you mentioned. This KA, I

Bosch would be good but have to check the pricing, what you can get in
the line of extras, etc.

JK> bought in Feb. 2005, and right after I got it, one of the pieces of it
JK> broke off where you'd insert other attachments. It doesn't affect the
JK> functionality of the machine or keep you from using the attachments,
JK> but it burned me up that the piece broke off so soon after I'd gotten

That would be a bummer. The first time we used a pizzele maker a few
years ago a small foot broke off. Too many plastics in stuff now.

JK> it.. and since I really needed the machine right then, I didn't want
JK> to ship it back for replacement. The Bosch looks really powerful.. the
JK> reason I didn't replace my KA with that one, is that I'd already
JK> bought so so many attachments for the KA.. to get the same type for

That's one reason I've not geiven up my Oster yet; I've got the blender,
dough and regular mixer parts, ice cream maker, food grinder.....used to
have the salad crafter and mini food proccessor but put them aside for
yard sale after we got the big proccessor. The attachment I'd miss the
most would be the blender--and the mini blend jars I can use with it.

JK> the Bosch would have cost a fortune.

But if they last forever.......

>> breadmachine mess up once, not mixing the dough thoroughly enough..
>> That's a Zojirushi, with two paddles.. it still messed up though..

JK> > I got one of those last May for Mother's day, along with an Oster
JK> > toaster and Hamilton Beach food proccessor.

JK> Ah nice :) See you are like me too much sometimes I think :) My mom
JK> would have slugged my dad if he bought her kitchen toys for her
JK> birthday or mother's day.. I love getting them :)

Steve knows he has to get me a "pretty" as well as a practical. He go
me two pretties for Christmas and no practicals.

 JK> >It's our 3rd bread machine;
JK> > cost more than the first 2 combined (Gold Star, then West Bend).

JK> Yeah, it cost a bit.. I got it online for about $200.00 I think, at
 JK> pleasanthillgrain.com. I think I found that place when I was ordering
JK> groats and grains that I could then grind.. they have an incredibly
JK> great amount of toys on that site :)

Have to check them out. We bought more wheat today at .59/lb at our
favorite natural foods store locally.

>> just one time, but it was enough for me to not trust "leaving" it to
>> mix without checking it :)

JK> > I always check it as it begins to knead, then I can leave it. I
JK> usually > find that the sides of the pan benefit from a scraping down
 JK> part way
JK> > into the cycle, otherwise, all the stuff won't incorporate. BTW,
JK> new > machine is the one we weigh the flour flour in the whole wheat
 JK> cycle.

JK> I do as well 'specially now <g>, I was in a rush that day... of
JK> course... things like that always happen at the worst time :)

It's the law of "go figure". (G)
