Actually it DOES sound good!

Much cheaper. Frozen hash browns and french fries are a bit cheaper
but still more expensive than and not as good as fresh, just more
convenient.

I just bought some yesterday. They were $0.79 for bulk loose,
5 pounds for $2.99, 10 pounds for $4.99 and 20 pounds for $6.99.
We bought a 20 pound bag even though there are only two of us at
home these days.

We tend to eat them often when we do have them, then do without for
a week or two to build up a craving, then repeat. For the past two
weeks we have been eating bread, rice and pasta only so we are
looking forward to them again daily or even twice daily.

They keep best in a cool dark space. Back in Ontario they were
cellared from early Sept when they were harvested to March and
beyond. At 70 F they will easily last 3-4 weeks in my kitchen
pantry. After they have dried out and matured a bit I will
refrigerate them if over a month old and then I can go two months
per bag.

And they keep better if there is limited but some airflow so I
transfer them from the plastic bag they are sold in, into either a
perforated plastic bag or a paper one.

I rarely make plain hash browns and like adding things to them. This
morning's brunch featured: diced small new potatoes, skin on,
chopped onions, celery and a mix of sweet and hot, red and green
diced peppers, one "smokie" sliced into coins, all fried in bacon
grease and seasoned with salt, pepper, cayenne then garnished with
parsley and scallions. Served with bacon, eggs, cheese toast and
canned salsa.

I plan on making a potato salad and a chowder next; they will end up
at the office for quick lunches.

      Title: Get-Together Grilled Chicken Bundles
 Categories: Main dish, Camping, Chicken, Potatoes, Grill
      Yield: 4 Servings

      4    Chicken breasts, skinned and
    -boned
      2 md Potatoes, thinly sliced, or
    -3/4 lb new potatoes or
    -sliced potatoes (precooked
    -for 5 minutes
      1 md Zucchini, cut in 1/2" slices
      2 md Carrots, thinly sliced
  1 1/2 c  Mushrooms, whole
      1 md Onion, thinly sliced
    Salt and Pepper
      1 c  Apple juice (or cider)
    1/2 c  Apricot preserves, melted
    -(optional)

  The Riverside Park in the historic little southeast Iowa town of
  Bentonsport is where Jane Dooley of Fairfield, Iowa, and her family
  gathers for summer reunions. Her chicken and vegetables steam on the
  grill in easy-to-serve foil packets.

  Place each chicken breast on an 18-inch square piece of heavy-duty
  foil. Divide all vegetables among foil packages and season with
  some salt and pepper.  Drizzle with some apple juice.  Seal foil
  well, leaving room for steam.

  Place directly over medium-hot coals.  Grill 20 to 25 minutes,
  turning once, till chicken is done and vegetables are tender. Open
  packets to serve.  Drizzle with preserves, if you like.

  Picnic Hint:  Assemble chicken-filled packets at home, and
  transport them to the picnic site in a cooler filled with ice. To
  melt preserves, place in a heavy-duty plastic container and set it
  in the sun on your car's dash or back window.  Or place in metal
  bowl off to the side on the grill till melted.

MMMMM

I often do foil packets when car camping or at the beach but not
with fruit juice and preserves. Too sweet. Must be a mid-west thing.
