Ärende: Lemon Pork loin pork Roast

I posting this so I don't forget how I made this Lol.. it came out so good. I
love buying organic/grass-fed meats, but the problem with getting them at
Wegmans is they are always so small compared to 'regular' counter cuts.  These
organic cuts are so small they often end up cooked to death.. so I hunted
around my various cook books for ideas.  I found something like this in the
gigantic "The Silver Spoon" cookbook, said to be very popular in Italy.

Lemon and Garlic Pork Roast

1.25 lb. Organic loin pork
1 Tablespoon Frontier Salad Sprinkle (with lemon bits, parsley, pepper, sesame
seed, and garlic)
1 teaspoon garlic powder
2 teaspoons lemon zest (fresh or dried) 1/2 teaspoon black pepper
1/2 cup lemon juice
1/4 cup sugar
1/2 cup white wine, or white or red wine vinegar mixed with 1/4 cup water. 3
Tablespoons olive oil
2-3 Tablespoons butter

Preheat the oven to 400F

Sprinkle the pork with salt and pepper, then make a few inscisions in the meat.
Grind the salad sprinkle into a small bowl, add the garlic powder, lemon zest,
and pepper.  Stuff the inscisions with the spices.  Roll the pork up and tie
with kitchen string.  Cover the surface with more garlic powder, salt, pepper
and salad sprinkle.  Heat the oil in pan and brown the rolled roast until
golden brown all over, turning it so that it browns all over.  While the pork
roast is browning, heat the lemon juice, sugar, wine or vinegar and water
briefly, stirring so that the sugar melts.  Place the browned roast in a baking
pan, and pour the heated liquid over it.  Cover the baking pan with tin foil
and roast covered at 400F for 20 minutes.  Reduce the heat to 350F, roast for
another 25-30 minutes, lifting the tin foil and basting often.  Add the butter
at the end of 30 minutes and roast for another 5 minutes or so to melt the
butter. Remove the pork from the oven, and place the roast on a cutting board
to let it rest before slicing.  Place the roasting pan on the stove top over
med-high heat for about 5 minutes, stirring and cooking until the butter
thickens the sauce a bit.  Slice the pork and pour the sauce over the slices
before serving.
