      Title: Nibby Pecan Cookies

      1 c  Pecan halves
    1/2 lb Unsalted butter, softened
    3/4 c  Sugar
    1/4 ts Salt (slightly mounded if
           - you like)
      1 tb +1 ts bourbon
  1 1/2 ts Pure vanilla extract
    1/3 c  Cocoa nibs
      2 c  All-purpose flour
 
  Adapted from "Bittersweet: Recipes and Tales from a Life in
  Chocolate" by Alice Medrich (Artisan, 2003). As Medrich
  suggests, these tender cookies should be baked at least a
  day before serving to allow the cocoa nib flavor to develop.
  
  Preheat the oven to 325øF/163øC
  
  Spread the pecans on a cookie sheet. Toast them in the oven
  until fragrant and lightly colored, 7-8 minutes. Let cool,
  then chop.
  
  In an electric mixer, beat the butter, sugar, salt, bourbon
  (if using) and vanilla until smooth and creamy but not
  fluffy. Beat in the pecans and cocoa nibs. Turn off the
  mixer and add all the flour at once. Mix on low speed just
  until the flour is incorporated.
  
  Form the dough into a 12-inch log about 2 inches thick. Wrap
  in wax paper or plastic wrap and refrigerate overnight.
  
  When you are ready to bake, position racks in the upper and
  lower thirds of the oven and preheat the oven to 350
  degrees.
  
  Use a sharp knife to cut the cold dough log into
  1/4-inch-thick slices. Place the cookies at least 1 1/2
  inches apart on ungreased cookie sheets.
  
  Bake until the cookies are light golden brown at the edges,
  12- 14 minutes, rotating the cookie sheets from top to
  bottom and front to back halfway through the baking. Let the
  cookies firm up on the baking sheets for about 1 minute
  before transferring them to a rack with a metal spatula. Let
  cool completely. For best flavor and texture, store the
  cookies in an airtight container for at least 24 hours
  before serving.
  
  Makes about 4 dozen cookies
