White potatoes have a lot of potassium, but it's mostly in the skin,
which many people don't eat.  That's where their fiber is, too... ;) 
The yams have more nutrients (including Vit A) and, yes, more fiber
throughout the flesh, so that probably does help their glycemic index
number...  Taste very nice, too, of course... ;)

She's always been on the heavy side... what with prednisone for lung
problems and inactivity from the CP and COPD...  the steroids are
probably what kicked her over into diabetes, too... :(  Once we got her
off them, and got some of the sugar under control, she's not quite as
heavy as she was, and maintains there... still nowhere near skinny,
doubt she'd ever get there...  So, yes, she also needs to pay attention
to not have too many fats, either...

I tend to go for a little of the real thing (or occasional of the real
thing) versus the replacements... rarely does the replacement really do
the same...  She'd been talking about wanting Boss Sauce... I checked
the label there, and it wasn't as bad sugar-wise as I'd thought, so I
did get her that.  Then another, very sweet, BBQ sauce showed up in her
fridge...  I wasn't as happy about that one...  I do try to get the good
choices for her... :)
