Dunno about the laid fresh today part, but our favorite sushi chef here
does a very nice tamago.

You wouldn't need to leave there...  Does the stick blender and the
Internet make that much difference in the quality of tamago to be
found...? or is the difference in attitudes of diners...?

Taste is in the tongue of the taster... (or maybe that's the brain
of...?)  But I haven't worried that much about the rumors about the
dangers etc... hasn't killed me yet... ;>

That was a rumination partly based upon having "measured" the amount of
butter by eye/feel rather than by actual measurement... I was on the
generous side, I think...  But I also wasn't really thinking about the
turkey fat at the time...  :)
