      Title: Pan Roasted Chicken With Sweet Potato 'fries'
 Categories: Five, Poultry, Herbs
      Yield: 4 servings
 
  1 1/2 tb Vegetable oil
      2 lb Jewel or orange-skinned
           - sweet potatoes
  2 1/2 ts Seasoning salt; more or less
           Thyme and/or rosemary
           - branches (opt)
  1 1/2 lb Chicken half breasts; boned,
           - skinned
 
  Preheat the oven to 425øF. Coat a large baking pan with 1
  tablespoon of the vegetable oil. Cut the potatoes in half
  widthwise, then into wedges about 1/2-inch thick at the
  widest point. Place on a large baking sheet and toss with
  1/2 teaspoon of the seasoning salt. Spread out into a single
  layer, then sprinkle with a little more seasoning salt (to
  taste). Drape the optional thyme and rosemary branches over
  the top; they'll infuse the sweet potatoes with flavor.
  Roast for 12 to 15 minutes, until browned on the bottom,
  then turn the potatoes and roast another 12 to 15 minutes,
  until tender, golden brown and blistered.
  
  While the potatoes cook, season the chicken with the
  remaining 1 1/2-2 teaspoons seasoning salt.
  
  Heat the remaining 1/2 tablespoon oil in a large ovenproof
  nonstick skillet over medium-high heat. Add the chicken and
  saute until browned, about 5 minutes, then turn the chicken
  over and saute for a few more minutes. Transfer the chicken
  to the oven and roast for about 12 minutes, until the
  internal temperature reaches 170 degrees on an instant-read
  thermometer.
  
  Remove the chicken from the oven and let rest for a few
  minutes before serving with the sweet potatoes.
  
  Serves 4
