We've got lots of dried basil from what we grew last summer, suppose
that would work (almost) as well.

I've got dried coriander, lots of fresh garlic, no shallots but a sweet
(Vidalia type) and regular onions.

Got brown sugar and raw sugar; both staples in the kitchen here.

Lemon grass--a citronella like taste. I don't like too much of it at a
time but will take some. Same with the mint--OK in moderation but too
much is too much.

Looks easy enough; I think I've got almost everything on hand. Mint is
outside in the bed; I'll have to thin it and the oregano once things
warm up a bit.
