Above you state "TV local sportscasters" and then carp about them reporting on
local sports. That was the whole point of my reply. For national - or even "out
of town" sports there is ESPN, etc.

I started in the news business writing a column for a local, weekly, all-sports
tabloid. That expanded to columns on racing, hunting and an occasional outdoor
cooking column under the name of Wally Turner. Then I took a gig as the editor
of a 5 paper group of small-town weeklies - the inside pages were common
articles, ads, etc. Local news, sports, church news (big in rural Illinois) and
gossip (big anywhere) went onto a four page wrap around for the common insides.

We always had a cooking column - either written by me, one of our
"correspondents" or clipped from Derus Media Service - and featuring
'sponsored' products ... but, always pretty decent recipes.

I first ran across beaver tail when writing the Wally Turner column in the
Sports Spotlight. I've never experienced it directly. Although, if it were on
offer I'd give it a shot.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Chicken Brochettes
 Categories: Poultry, Herbs, Dairy, Bbq, Citrus
      Yield: 12 servings

      2 lb Chicken meat; breast/thigh
      2 cl Garlic; crushed
      1 tb Fresh ginger; grated
      1 md Onion; minced
      2 tb Lemon juice
      3 tb Ground cumin
      3 tb Garam masala
      1 tb Salt
  3 1/2 oz Natural yoghurt
      3 tb Coriander; minced
     12    Brochettes; bamboo or metal

  Dice the chicken small. If using bamboo skewers, soak
  them in warm water. Process the onion, ginger, lemon
  juice and spices.

  Add the salt and yoghurt and mix well. Thread the
  chicken pieces onto the brochettes; place them in a
  Pyrex or other non-reactive oven dish and spray/cover
  them with the spice mix. Place in the refrigerator
  for five hours, covered.

  Roast on a charcoal or gas grill until done.
