And I buy the economical 10 kg (22 lb) bags at the Asian store and
carry two kinds, Thai and Basmati, which is a two year supply for
us.

I don't have that many jars that big!

So what I do is freeze the bags for a week as a precaution against
bugs, then store them in eskies (insulated picnic hampers) which
have tight fitting lids but might not be completely airtight. Like
you I scoop out a one quart jar at a time to have a handy supply on
a pantry shelf.

     Title: (AC) Meatball and Rice Soup
Categories: Historical, Heirloom, Canadian
  Servings: 10

  2 1/2 c  ground lean hamburger
      4 lb stewing meat, cubed
           Several soup bones
    1/4 LB Lard or Shortening
  1 1/2 ts salt
    1/4 ts pepper
    1/2 c  rice
    1/4 c  barley
    1/4 c  chopped celery
    1/2 c  tomato juice or diced
           tomatoes
      5 c  cold water

Grind meat several times. Mix well with salt and pepper. Shape into
3/4 inch balls brown in hot fat. Brown soup bones and bring soup
bones and meat to boil with water in pressure cooker. Skim froth.
Cook under pressure for 20 minutes. Add meat balls, rice, barley and
tomato juice. Cook under pressure for 8 - 10 minutes. Remove bones.

This is a very old recipe and here is how it was originally
prepared:. Pound meat well with a strong tenderizing wooden mallet
until flat. Cover the meat with salt & pepper. Fold the meat over
and pound again until meat becomes smooth and pasty. Shape into
small balls and brown in hot fat. Brown soup bones in fat. Add
tomato juice, celery and seasonings. Simmer until meat balls are
done. Add one half cup rice and cook until tender.
Add salt to taste.
