Ärende: Ribs
============
Hi Dale,

RH> I understand. I'd feel the same way without Steve if it were a job
RH> situation that had me traveling. We did go back to the bbq place; they
RH> were giving out samples of ribs (dry Memphis type rub), sliders of
RH> hickory smoked pulled pork with NC red cole slaw (something new to us)
RH> and Buffalo smoked chicken wings, all with shoe string cut fries.

DS> I've decided that I prefer the dry rub type of ribs, with some sauce
DS> on the side. Gail and I discovered a BBQ place in Laurel -- not far

Sounds about right for me too, tho sometimes I skip the sauce. BTW, it's
a St. Louis style rub on the ribs; we went back last night to check out
the full menu.

 DS> from
DS> that Hispanic grocery store we once took you to. We've been there
DS> twice. He has a smoker out back, and claims to start the meats at
DS> 0700. First time I got a sampler platter with 1/4 rack of ribs,

You have to start the meat early to serve it for supper. The new place
opens at 4 tho they're talking of starting things earlier so they can do
lunches as well. The aroma coming from that end of the plaza is enough
to entice just about anybody in the area.

DS> pulled pork and BBQ chicken. I rarely buy BBQ chicken out, but this
DS> was pretty decent -- crisp skin with decent sauce. The ribs were dry
 DS> to start
DS> with, but he coated them liberally with his sweet sauce and finished
DS> them on a grill in the kitchen. In addition to his medium hot sweet

I would have needed a take home box for probably 2/3 of the meat. (G)

DS> sauce, he also has a hot sauce, a super hot sauce and one that is
DS> essentially vinegar and spices. The second time we went, I got ribs
DS> and asked for them dry. Very good. I put an occasional dab of the
 DS> medium
DS> sauce and also had a small cup of the NC vinegar sauce that I dipped
DS> some of the pieces into.

DS> We like the place and it is going onto our "regular" list of places to
 DS> visit.

If it's that good, I'd have it on mine as well. This place will be on
our regular list, as will the one on the other side of town. That one is
in the same plaza as the Andy's we tried (and liked) on your
recommendation.

DS> I've never understood putting cole slaw on pulled pork. I understand
DS> having it as a side dish, but not on a sandwich itself.

I prefer it on the side also. If I order a sandwich, I'll ask to have
the slaw on the side. Tried the new place's regular slaw last night; I
like it better than the red NC style. Not as sweet, a very good thing.
It looked to be cabbage, celery seed, maybe something else and light on
the mayo.

RH> Couldn't buy anything but drinks as they'd not had the official health
RH> inspection (That was today, smelled like they passed) yet. At the
RH> tables, they had a house sauce (thick, tomato based, too sweet) and
RH> what they labeled as Lexington style but looked & tasted like a red
RH> version of eastern NC pulled pork bbq. That one was good on the fries!

DS> Have you ever been to Famous Daves -- a chain? They have a large
DS> variety of sauces at the table for you to sample. Not bad food, we've
 DS> had
DS> better and we've had worse.

Never been to Famous Dave's but have been to other places that have had
a variety of sauces. Don't remember where but one or two places we've
been to have had as many as 6 different ones. Just a medium hot red and
a vinegar based medium would do me fine. No mustard, no mild, no super
hot and no super sweet. Of course your choices would differ, so they
need to set the assortment. (G)

RH> Steve isn't into art as much as I am, especially those artists trying
RH> to make a statement. It's more of a "What were they thinking when they
RH> did that?" with a lot of the more modern artists. Restaurants--we'd

DS> When we lived in England, we would sometimes visit a square in London
DS> on Sundays where the artists displayed their wares for sale. Much of
 DS> it
DS> was of that category -- i.e. what were they tripping on when they did
DS> that. But we have gotten a couple of nice pieces from there.

Beauty is in the eye of the beholder. There's a lot of art I'm
comfortable with but Steve isn't. (I think he likes my needle and thread
art the best.--G--)
