Not nearly as sorry as I am. But, in point of fact, when that Corky's opened it
was a franchise operation and pretty much chewed the bitter carrot. As I
understand it the franchisee finally burned through all his cash and credit
lines and canned out owing the mother ship a pile of gelt. So, to recoup at
least some of what they were owed the Memphians converted it to a company store
and sent in a manager and pit-master who knew what they were doing. This store
was actually doing quite well, turning the tables twice at lunch and four or
more times at dinner, according to one of the shift managers I met. Fiscal
difficulties elsewhere in the company forced them to put it up for sale and
when they could not find a buyer due to the economy being driven off a cliff
.-. (I won't get into politics. I won't. Not here.) they stuck it out until the
lease was up and pulled the plug. The venue is now a mediocre Mexican joint.

Oddly the yellow pages show 31 listings for Mexican restaurants - without
counting the fats food Faux-Mex places like Taco Gringo, Jolly Tamale, and Taco
Bell. It also shows 27 Chinese, 3 Vietnamese, 4 Japanese, 8 Thai, 2 Indian and
1 Korean venue. But, just 7 BBQ joints including 2 Hickory River franchises, a
Smokey Bones, three BBQ "stands" (take away only) and just one non-chain/
non-franchise sit-down - Clay's Popeye's Bar-B-Q of Springfield.

North Carolina can be quite cosmopolitan in a red-neck, cracker sort of way.
Possibly influenced by New Yorkers stopping to eat on their way to over-winter
in Miami.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Miami Heat Chilli
 Categories: Chilli, Stews, Beef, Beer, Chiles
      Yield: 4 servings
 
      5 ts Oil; divided
      1 lb Round steak; in 1" cubes
      3 tb Chilli spice
      1 tb Ground cumin
      1 tb Instant minced garlic
    1/2 ts Dried oregano; crushed
    1/2 ts Paprika
    1/8 ts Cayenne; or more
    1/8 ts Ground black pepper
     15 oz Can tomato sauce
     12 oz Beer; NOT LITE
  1 1/2 c  Water *
 
  * or Chicken Broth - UDD
  
  In dutch oven or large sauce pot, heat 2t oil until hot. Add
  meat, a few pieces at a time; cook and stir until browned
  on all sides; remove to a plate; repeat until all meat is
  browned.
  
  Heat remaining 3t oil until hot. Add chilli spice, cumin,
  garlic, oregano, paprika, black and red peppers; cook and
  stir 1 minute. Remove from heat.
  
  Stir in tomato sauce, beer, water and reserved meat; bring
  to a boil; reduce heat and simmer, covered, until meat is
  tender, about 2 hours, stirring occasionally.
  
  Serve with cooked pinto beans, chopped onions, jalapeno
  peppers and grated Cheddar cheese, if desired.
