Instant mashed are dried potatoes with a lot of other stuff, including
chemical soup; potato starch is nothing but potato starch (according to
the can of Manischevitz I've got on my shelf).

I've got a ricer that gets used as a spaezle maker. (G) My mom used to
use a manual masher but some years ago started using a hand mixer. The
potatoes went from having some lumps to a lot of lumps. Dad isn't fond
of alternatives to potatoes so they eat a lot of mashed--talked to them
on Skype the other night and he was complaining about how the 5 & 10
pound bags of potatoes my brother picks up just don't last that long.
They're still, 7 months after Hurricane Irene hit, without a grocery
store in town so my brother does most of their shopping on his way home
from work or otherwise. They did go down to another town where a store
was closing to get some deals but it's a major trip for them now.

Some of the store brands do seem to be of a lesser quality than the name
brands I've noticed over the years.

An Aldi's just opened here in WF on Thursday. We got a bunch of paper
products, some fresh produce and some fruit snacks (100% juice) that we
like. I don't think it will be a major store for our shopping/eating
style tho. I don't buy many canned vegetables (tomatoes are the major
exception) and am buying a lot more fresh than frozen. Used to buy a lot
of frozen, especially when the girls were with us, but have done a major
swing away from them over the last few years. The taste is just so much
better, IMO. I know, field to frozen advertises the veggies lose less
nutrients but canning, especially, takes a lot out of them as well.

I don't use corn in my salsa, don't want Steve to have too much so he
can keep migraines at bay. OTOH, I do buy bell peppers on a regular
basis. Not as many green as I used to, and I know they cost more, but we
use a lot of reds and some orange or yellow. But, if I had green, I
would use it. Just a matter of choice--and what makes this echo keep
going, as we debate things like this. (G)

I've encountered ones like that. Right now my main reading is "Bible
Doctrine" by Wayne Grudem (Steve calls it "theology light") for my last
class.
