That would be pretty cool though, a Ukrainian restaurant run by Chinese.
One thing though, it never struck me until I was watching a special on
Russia on the History Channel. Russia at one time was largely populated
by Chinese or people of chinese descent. It was such a Huge country It
was like us for a different reason, it was a melting pot of heritage.

Yes... That is a popular traditon amongst the Christians of that area.
Mostly of the Eastern tradition, like the Orthodox or Byzantine
Catholics. Here Many have their celebration on Christmas Eve. Their
tradition is much more solemn. With as You say meatless dinners, and
they eat some bitter things etc. Not typical American fare. Totally
different atmosphere. I have never partaken of that tradtional meal, but
I again, also saw a special on that. It was quite interesting. In
honesty, much of us would not like it. It isn't a celebratory meal at
all.

I could go for a try of that!

One of my favorite side dishes was the Green beans and spatzle from
Birds Eye, can't find it too often anymore, but when You can I grab a
couple of bags. That was more of a German style. It was/is good!

Russian Mushroom and Potato Soup

Ingredients

    5 tablespoons butter, divided
    2 leeks, chopped
    2 large carrots, sliced
    6 cups chicken broth
    2 teaspoons dried dill weed
    2 teaspoons salt
    1/8 teaspoon ground black pepper
    1 bay leaf
    2 pounds potatoes, peeled and diced
    1 pound fresh mushrooms, sliced
    1 cup half-and-half
    1/4 cup all-purpose flour

    fresh dill weed, for
    garnish (optional)

Directions

    Melt 3 tablespoons butter in a large saucepan over medium heat. Mix
    in leeks and carrots, and cook 5 minutes. Pour in broth. Season with
    dill, salt, pepper, and bay leaf. Mix in potatoes, cover, and cook
    20 minutes, or until potatoes are tender but firm. Remove and
    discard the bay leaf.

       Melt the remaining butter in a skillet over medium heat, and
       saute the mushrooms 5 minutes, until lightly browned. Stir into
       the soup.

       In a small bowl, mix the half-and-half and flour until
       smooth. Stir into the soup to thicken. Garnish each bowl of
       soup with fresh dill to serve.
