Perhaps our stay closer to the old country ways because there are
enough of them that they don't feel forced to assimilate.

There are over 1 million people of either full or partial Ukrainian
origin residing in Canada (mainly Canadian-born citizens) making
them our ninth largest ethnic group and making us the world's third
largest Ukrainian population behind Ukraine itself and Russia.

Ukrainians are a plurality in several rural areas of Western Canada:
Vegreville, Alberta reported 41% in the last census and St. Paul,
Alberta 31%. There are also lots of them around Peace River where my
son lives and, as I mentioned earlier, around Ft. Vermilion where
my wife grew up. Today a lot of  public schools there offer Ukrainian
as a second language as well as French.

The first Ukrainian families settled in southern Manitoba in the
1870s along with Mennonites and other Germans from the Russian Empire.
Then there was a huge wave starting in 1891, mainly from the western
part of the Ukraine (Galicia and Bukovyna) which was part of the
Austro-Hungarian empire at the time. Ukrainians from Eastern
Ukraine, which was then part of the Russian empire also came to
Canada in smaller numbers. Later immigration came out of Poland and
Romania as borders shifted.

The Ukrainian immigration to Canada was largely agrarian and
concentrated in settlements in the wooded northern part not the
open prairie part of the western provinces: Alberta, Saskatchewan,
and Manitoba. That was also where the last of the undeveloped, free,
homesteading land was located in the late 19th and early 20th
century.

Most Ukrainians who came to Canada from Galicia were Ukrainian
Catholic and those from Bukovyna were Ukrainian Orthodox.
The Orthodox group were strongly anti-Russian and set up their own
independent church: the Ukrainian Orthodox Church of Canada.

And the Ukrainian Catholic church is a separate structure from the
Roman Church.

They both use the Julian calendar to observe Christmas and Easter
but of course follow the Gregorian calender in every day life.

      Title: Mustard, Russian Style
 Categories: Condiments, Russian
      Yield: 1 batch
 
      3 cn Colman's dry mustard
      1 c  Sugar
      1 ts Salt
           Boiling water
      3 ts Sugar
    1/2    Lemon, juice of
    1/2 ts Salt
      3 ts Wesson oil
 
  Mix together dry mustard, 1 c sugar, and 1 ts salt with 1 c
  boiling water. Mix well until the mixture is smooth and resembles
  heavy cream. Pour another 1 c boiling water over the top and let
  stand 3-4 hr. Add 3 ts sugar, lemon juice, 1/2 ts salt and Wesson
  oil. Mix well.
