I missed this earlier, sorry for that.. I hope Ruth is doing better now.

Diabetes can be a challenge, that's for sure.  Mom dealt with that, and so did
my father-in-law before he died.  I remember making an apple pie with no added
sugar and a truly "mininmalist" crust for Ron's dad way back <g>.  He could
still only have a small portion... His diabetes though I think was much more
out of control.. and I suspect he cheated a lot more than not :(

So far, I'm ok with blood-tests and at my age, that's something.  Mom was
diabetic sometime around the time she hit the age of 50.  Everybody is
different I guess.

This recipe, I've posted it before here years ago maybe, is what inspired me to
really skimp on the pie crust for that pie for my Father-in-law:


==Apple Pastry (Strudel) Napolitano==
Preheat oven to 350F

Pastry:
3/4 cup flour
1 Tablespoon olive oil
1 teaspoon salt
Enough milk to moisten filling ingredients.

Filling:
8-10 medium apples, peeled and cored 10 almonds
1/2 cup golden raisins
1/2 teaspoons cinnamon
1-2 Tablespoons butter
5 Tablespoons sugar
1 teaspoon grated lemon rind

Put the pastry ingredients in a bowl and mix.  Let the pastry sit for 5 minutes
or 10 minutes.  Form a ball of the dough.  The dough should be soft, but not
sticky.

Turn dough out on a floured board and knead a few minutes.    Flatten and
stretch the dough from the center with your hands.  Keep stretching to a large
thin sheet (similar to pizza).

Spread the Apple filling mix in a thin layer over the pastry.  Roll the pastry
starting from the back toward you.  Pinch any holes together that may form.
Pinch the edges together to seal the pastry.  Cut the roll in 2 or 3 sections
almost to the edge.  Lift the pasty onto a buttered cookie sheet.  Bake at 350
for 20 minutes, or until golden brown.

To bake: cut the roll in two or three sections and lift onto buttered baking
sheet.

Bake at 350F for 20 minutes or until golden brown.
