My flying enthusiast friends are of two sorts, one, who
fly all the time and can tell me what last month's San
Fran to London menu was in all three classes on United,
and two, who think that Juan Trippe (I think that is a
cool and appropriate name for an airline guy) is still
the CEO of the premier airline in the world.

cat: main, middle east
servings: 4 to 6

2 c bulgur (to 3 c)
1 ts salt
1 ts black pepper
1 ts cumin
1 ts turmeric
2 Tb oil
2 chicken stock cubes
1 kg boneless, skinless chicken, diced*
1 lg chopped onion
2 tomatoes
lemon

* Lamb, chicken or fish can be used

Soak wheat in a pot of water for at least 2 hr. Many people
advise doing this the night before and leaving overnight.

Fill a medium pot around halfway with water and bring to boil.
Once the water has started to boil, add 1 ts each salt, pepper,
cumin, and turmeric. Add 2 Tb cooking oil along with the
chopped onion and tomatoes. Crush the chicken stock cubes and
add to the water.

Drain the wheat and put into another cooking pot. Pour the
above mixture over the wheat so that it just covers/soaks the
wheat. Cook 15 min; it eventually should be a whitish puree.
Add the chicken.

Cover the cooking pot with the lid and leave to simmer on a
low flame for 3-4 hr. Check regularly and add water if needed.
Eventually, the extra water should evaporate, the chicken will
become so soggy it breaks up, the wheat and chicken mixture
will look like a thick white paste and so the harees should
be ready. Add lemon and serve.
