Roslind is up there again for a ten day stint and called home last
night. Electricians and plumbers from Down South, who were supposed
to be gone Wed, were still living in HER house when she arrived Thur.
and are still there, so she is stuck in the crappy hotel. She did
stow her groceries at the house and is cooking most of her her meals
at the Wellness Centre's receptionist's house. They are taking turns
cooking, alternating between traditional Inuvialuit dishes and
standard Canadian ones. So Roslind made grilled sirloin steaks with
all dressed baked potatoes and a salad of mixed baby greens,
scallions and Italian dressing on her night while the other lady
made fish head soup from arctic char and caribou brain stew on her
two nights, with baked caribou heart planned for the near future.

As an aside Inuit means "The People" and Inuvialuit means "The Real
People". How arrogant of them! [g]

The brain stew was reported to be quite tasty. I plan to get the
recipe when she gets back. I suspect it will be all meat broth and
brain, no veggies, and seasoned with soy sauce, which is the the one
non-traditional seasoning that has become really popular in the
arctic in the last 60 years since it became widely available.

By coincidence I was roasting one of the char Roslind brought home
and also made a small batch of fish head soup. Mine was fish
stock, cheek and head meat, potatoes, celery and scallions seasoned
with thyme, salt and lots of black pepper. No milk or cream. I'll be
having cold roast char with spicy caper mayonnaise tonight.
